How to make Oats Poha

To make Oats Poha for two you need:

Rolled oats 1 cup
Onion 1, finely chopped
Tomato 1, finely chopped
Potato 1, peeled and chopped
Green chilli 1, finely chopped
Green peas 1/4 cup
Roasted peanuts 1/4 cup
Mustard seeds 1/2 teaspoon
Cumin seeds 1/2 teaspoon
Curry leaves 8-10
Turmeric powder 1/4 tsp
Lemon juice 1 tablespoon
Oil 2 tbsp
Salt to taste
Chopped fresh coriander leaves for garnishing

How to make Oats Poha

  • Start by dry roasting the oats in a pan on medium flame till they turn light golden and start emitting fragrance. This step enhances the flavour of the oats. Once roasted, keep them aside.
  • Heat oil in the same pan over medium flame. Add mustard seeds and cumin seeds. When they crackle, add curry leaves and chopped green chillies. Fry for a few seconds until the spices become aromatic.
  • Add finely chopped onions to the pan and fry until brown. Then, add chopped potatoes. Cook for about 5-7 minutes, until the potatoes are almost soft.
  • Add chopped tomatoes and green peas to the pan. Cook for 3-4 minutes until the tomatoes become soft and pulpy.
  • Add turmeric powder and salt. Mix well so that the spices are evenly coated over the vegetables.
  • Add the roasted oats to the pan. Stir to combine all the ingredients well. If the mixture seems too dry, sprinkle some water, but be careful not to add too much water as this may cause the oats to become too mushy.
  • Cover the pan with a lid and let the oats cook with the vegetables on low flame for about 2-3 minutes. This will allow the oats to absorb the flavours and become soft.
  • When the oats are cooked, turn off the flame and add green coriander leaves and peanuts and finally add lemon juice.
